Baked Eggs Napoleon


I always love the idea of trying anything different with eggs. When I came across such an idea was excited baking this and the result was just awesome. It tasted so delicious that I bake these very often after a pizza with lots of variations with the available combo and trust me guys, it never failed me.
And definitely an interesting snack for kids and a treat for people on diet. 
Delicious Eggs in minutes can be relished with breads and juices for a yumm filled breakfast!!!

Ingredients:
Eggs2
Onion1/2 chopped finely
Capsicum1/4 chopped finely
Garlic5 pieces minced
Mozarella Cheese100 gram
Bread piecesFrom 2 breads
PepperAs required
SaltAs required
Butter2 tbsp
Olive OilAs required for greasing

Method of Preparation:
  • Preheat oven to 180 degrees C. Heat a small skillet over medium high heat.Melt butter and toss in the bread pieces until nicely roasted. Transfer to a plate. 
  • Again reheat the same skillet and melt in some butter,add the chopped onion and saute well. Add the chopped capsicum and minced garlic and saute well for 5 minutes until its done.
  • Grease the ramekins or muffin tin with olive oil. 

  • As everything is now ready, divide the contents for two and form the base with onion mixture cooked, then top it with bread crumbs, grate cheese on top, finally break an egg on top and season with salt and pepper. 
  • Bake in the oven at 180 degrees C for 5-7 minutes or until the egg is set. Let it rest for five minutes, unmould and serve warm. 
Notes:
  • You can also add vegetables of your choice or meat in the base. 
  • Also top it with more cheese on top of eggs.
  • Oil fried crispy potatoes make an excellent base.
