Mango, Mango Everywhere...!!! and Its Mango Muffins on its way!!! The juicy yellow fruit taste and flavour packed as muffins.


WHOLE WHEAT MANGO MUFFIN
Recipe Category:Bread 
Preparation Time:20 minutes Baking Time:10 minutes Serves:6 pieces
Ingredients:
Wheat Flour 1 Cup
Baking Powder 1 tsp
Baking Soda 1/2 tsp
Salt pinch
Mango purée 1 Cup
Oil 1/4 Cup
Sugar 1/2 Cup
Vanilla Essence 1 tsp
Milk 1/2 Cup

Method of Preparation:

1.Preheat the oven to 200 degree C. Take a wide bowl, sift flour, baking powder, baking soda and salt twice. Keep it closed aside while preparing the wet ingredients.

2.Make mango puree with blender. In a bowl, add mango puree, oil, sugar, vanilla essence, milk and mix well.

3.Add flour little by little to the wet ingredients until combined without any lumps. Don't over whisk. Line the muffin cup with muffin liner and drop in the mango batter just 2/3rd cup.Just tap gently so that it spreads the cup fully. Bake at 200 degrees C for 10-15 minutes or until the top is browned. Let it cool for five minutes before you unmould. Store in an air tight container.

Notes:
  • You can replace this recipe with all purpose flour. 
  • You can also add small chunks of mango inside the batter.
  • You can less the quantity of mango pulp used as this recipe has strong mango flavour.
