Chana Masala Recipe | Chole Masala Recipe for Poori | Side Dish Recipes

Chana Masala always reminds me of my friend in college, who used to bring this amazing tasty chole masala with bhatura. Even now, her mom's chole masala is the best to me. This recipe is close to my friend's mom recipe. My mom's recipe is different which I will post soon. That suits for kids as it is less spicy but very flavourful. Whichever way we make, chana and batura/ poori is a combo made in heaven. Truly yummy!!! Let's relish!!!

CHANA MASALA | CHOLE MASALA RECIPE
Recipe Category: North Indian | Side Dish
Soaking Time: 6 hours/overnight Preparation Time: 20 minutes 
Cooking Time: 20 minutes Serves: 4
Ingredients:

Chickpeas - 1 cup, soaked
Onion - 1, finely chopped
Turmeric Powder - 1 tsp
Red Chilli Powder - 2 tsp
Chana Masala - 1 tbsp
Coriander Powder - 1/2 tbsp
Salt - to taste
Water - 1.5 cup

To saute and grind to fine paste:

Cloves - 4
Cinnamon - 1
Star Anise - 1
Onion - 1 medium size,chopped roughly
Ginger - 2 (1 inch piece)
Garlic - 4 cloves
Green Chillies - 2
Tomatoes - 2, deseeded
Oil - 1 tbsp

Method of Preparation:
1. Soak chana for 6-8 hours or overnight. Pressure cook for 6 whistles and simmer for 15 minutes with 2 cups of water or until soft. Don't overcook. Set aside with the water in which the chana was cooked. In a pan, heat oil and add garam masala items and green chillies. Saute well and once the aroma of the spices come, add the chopped onions. Once the onions are cooked and turns golden brown, add ginger, garlic and tomatoes. Saute well. Switch off. Allow it to cool.
2. Heat oil in a pan, add chopped onion, masala: turmeric powder, chana masala powder, coriander powder, red chilli powder and mix well till the raw smell goes. Add the onion tomato paste and chana cooked water. Let it cook for a minute. 
3. Add the cooked chana and mix well. Let it cook in HIGH for few minutes or bubbling hot then reduce the flame to LOW and cook till it releases oil. 



Notes:
  • Don't overcook the chana. For the sauce to be mushy, some prefer grinding some cooked chana with the items to be grounded for onion tomato paste. 
  • Add water according to the desired consistency. 


Serve hot with Poori's.!!!
