Idli Milagai Podi is a real time saver in the busy morning. I am a crazy fan of any forms of podi, I could even eat it raw without oil or even add it to my coconut chutney for idli without oil. I survived worst breakfasts in my hostel during college days with different versions of this chutney powder. Even now, when I have sambar and chutney for dosa, I serve myself generous idli podi. IDLI MILAGAI PODI RECIPE

Ingredients:
Urad Dhal - 1/2 cup
Channa Dhal - 1/2 cup
Horsegram / Kollu - 1/2 cup
Red Chillies - 1/2 cup
Garlic - 3-4
Curry Leaves - 1/2 cup loosely packed
Sesame Seeds - 1 tbsp
Hing - 1/2 tsp
Salt - to taste

Sesame Seeds - 1 tbsp
Hing - 1/2 tsp

Method of Preparation:
1. Dry roast all the ingredients (Urad dhal, Channa dhal and horsegram dhal) separately till they become golden brown and set aside to cool.
2. Dry roast red chillies, once they turn crisp, add garlic and roast well. Transfer to the roasted dhals to cool. Dry roast the curry leaves and set aside to cool.
3. At last, dry roast the sesame seeds til it splutters. Transfer to the roasted ingredients. Once it cools down, transfer to a mixer. Add salt,hing and grind to a coarse powder or fine powder (your wish, I have grounded coarse )
Once it cools down, transfer to an air tight container. Serve with hot idli's and dosa smeared with gingelly oil or oil.
Notes:
- The texture of the podi can vary to suit your preference.
- This recipe is high spice, you can increase or decrease the quantity of red chillies to suit your spice level.
- Adding curry leaves is purely optional.
