Samai Mushroom Briyani Recipe | Little Millet Mushroom Briyani Recipe | Millet Recipes

My mom used to make many sweet varieties with millets and in each visit to home she surprises with a new recipe and they taste awesome. Starting with a sweet it was easy for me to bring millets in to our food. I was very surprised by the taste when I first made this Samai Mushroom Briyani, it had more than the usual flavours and taste with our regular basmati rice. I enjoy eating mushroom and briyani, and this was a real treat for a mushroom lover like me. It was difficult convincing my DH to eat this as he hates mushrooms and is very choosy with healthy foods :P But I wanted him to get the benefits of traditional foods, so made Samai Chicken Briyani for him and never expected him to like it so much..!!! Now I make samai ven pongal, kambu adai dosa, kambu chutney, cholam dosa, thinai idly, varagu coconut rice, thinai payasam frequently. 

Samai Mushroom Briyani being my favorite among the millets family, I am posting this recipe first. Soon you can find many millet recipes on the space. 

Samai or Little Millet is best replacement for white polished rice and its good for digestion, diabetics, cures stomach related problems and maintains overall health. 

Recipe Category: Indian | Rice 
Preparation Time: 10 minutes Cooking Time: 30 minutes Serves: 4 

Samai / Little Millet - 1 cup
Mushroom - 100 grams
Onion - 1
Tomato - 1
Ginger Garlic Paste - 1 tsp
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 1 tsp
Garam Masala - 1 tsp
Salt - to taste
Water - 2 cups(For rice) + 1/4 cup (For mushroom masala)

To grind to a paste:

Coriander Leaves - 1/2 cup
Mint Leaves - 1/2 cup
Green Chillies - 1

To Temper:

Ghee - 2 tsp
Oil - 1 tbsp
Cloves - 4
Cardomam - 1
Bay Leaf - 1
Cinnamon - 1 stick
Star Anise - 1
Mace - small piece
Fennel Seeds- 1 tsp
Cumin Seeds - 1 tsp
Curry Leaves - few

Method of Preparation:

1. Dry roast the samai rice for 1-2 minutes. Grind the items under to grind with little water to a fine paste. Keep aside.

2. Heat ghee and oil in a pressure cooker, add the items to temper, and fry til aroma comes. Add the chopped onions and fry til golden brown. Add the tomatoes and saute well. Add Ginger Garlic paste and saute well for a minute. Add the masalas, salt and the coriander- mint paste. Mix well.
3. Saute well and then add the chopped mushrooms. Saute well. Add 1/4 cup of water and let the mushrooms cook for few minutes.
4. Once it starts to boil, add the samai rice. Add 2 cups of water (For 1 cup of rice). Add few coriander and mint leaves. Add 2 tsp of ghee. Close and pressure cook for 1 whistle and simmer for five minutes. Switch off. Open after the pressure is released.

  •  Consume hot with any gravy and onion raita. 
  •  Use fresh and clean mushrooms. I have used button mushroom here.
Serve hot with onion raita!!!
