Kavuni Arisi Sweet is a very special dessert served in chettinad cuisine. We serve this dessert for any auspicious occasion. Kavuni Arisi or Black Rice is a black whole grain rice which is highly nutricious. It is actually purplish colour than black. It is a highly treasured and protected grain in Asia for many centuries.
The recipe is similar to the Thai style Black Rice Pudding in which they use coconut milk to cook the rice. It is mostly used for desserts. It is very rich in iron and fibre. With just two ingredients, black rice can be prepared to a very rich, creamy, delicious dessert!!!

Ingredients:
Black Rice \ Kavuni Arisi - 1 cup
Water - 3 cups
Sugar - 1/2 cup
Grated Coconut - 1/2 cup or as desired to taste
Cardamom - 1 tsp, powder
Method of Preparation:
1. Soak the black rice in water overnight or maximum 8 hours. Drain and set aside. Transfer the black rice to the pressure cooker.
2. Add Water. Pressure cook the black rice in water for 8-10 whistles in medium flame and simmer for 15 minutes. After the pressure is released, open and mash the rice very nicely using a masher or laddle.
3. Now heat the pressure cooker while mashing, add sugar, cardamom and mix well. Add grated coconut and mix well.
Delicious and a very nutritious chettinad special dessert is ready to be served hot!!!

Notes:
- Even after pressure cooking, if the rice remains hard, add little water and allow it to cook.
- Adjust the quantity of sugar to suit your taste.
- Easy to prepare.
