Cornflakes Cookies Recipe | Eggless Baking Recipes

Cookies Anyone?? Yep cookies are always a favourite snack during studying or watching tv.....In our home, we always stock up many varieties of cookies and this being one that we love to munch on!!! The lemon juice in the recipe gives a mild taste and enhances the flavour. Just sniff one cookie after its baked to enjoy the brilliant aroma its got!!

CORNFLAKE COOKIES RECIPE

Ingredients:

Butter - 1/2 cup
Castor Sugar - 1/2 cup
Flour - 1 cup
Baking Powder - 1/2 tsp
Lemon Juice - 1 tbsp
Vanilla Essence - 1/2 tsp
Crushed Corn Flakes - 1 cup
Milk - 1/2 tbsp (if required)

Method of Preparation:

1. Preheat the oven to 185 degree C(355 F). Take the butter in a mixing bowl and using a wooden spoon beat till its soft and creamy. Add castor sugar and beat well. Add vanilla essence and lemon juice. Mix well. Add the flour and baking powder through a sieve by mixing it with a spoon. Fold in gently. Add crushed cornflakes.

2. Fold well using hands. The mixture should now look like a dough. If not, If its crumbly, add little milk till it holds like a dough.  Divide the dough into equal rolls and press like a cookie. Arrange in the baking tray greased with butter or oil. Bake for 25-30 minutes at 180 degree C or till its turns golden brown.

Serve with a cup of tea!!!

Notes:

• If the mixture is crumbly, add milk else you can skip it. 
• For Crushed Cornflakes, run the cornflakes in a food processor for few pulses.
