Its been three days since I made my last post, so quickly worked on few of my posts from drafts and selected this yummy favorite puli kuzhambu of my mom's recipe for the day. I have been very busy going out with my BF to shop for her little girl's birthday!! We not only enjoyed roaming around but our long chit chat after years!!! She was the one first Friend of my life who is "More than a friend".
SUNDAKKAI PULI KUZHAMBU RECIPE
Recipe Category: South Indian | Side Dish
Preparation Time: 10 minutes Cooking Time: 40 minutes Serves: 6
Ingredients:
Sundakkai (Fresh) - 1/2 cup
Garlic - 10
Shallots (Small Onion) - 10, halved
Tomato - 1, medium, deseeded and chopped roughly
Turmeric Powder - 1 tsp
Red Chilli Powder - 1 tbsp
Cumin Powder - 2 tsp
Salt - to taste
Tamarind Juice - Lemon Size
Water - 1 cup or as desired
To temper:
Oil (Gingelly or Cooking)- 2 tbsp
Mustard - 1 tsp
Urad Dhal - 1 tsp
Garlic - 10
Shallots (Small Onion) - 10, halved
Tomato - 1, medium, deseeded and chopped roughly
Turmeric Powder - 1 tsp
Red Chilli Powder - 1 tbsp
Cumin Powder - 2 tsp
Salt - to taste
Tamarind Juice - Lemon Size
Water - 1 cup or as desired
To temper:
Oil (Gingelly or Cooking)- 2 tbsp
Mustard - 1 tsp
Urad Dhal - 1 tsp
Method of Preparation:
1. Wash the sundakkai and remove the stem. Then slice through a little and keep aside. Extract tamarind juice by soaking it in warm water for 15 minutes. Prepare the rest of the ingredients and keep it ready. In a pan, heat oil and add the items to temper under the ingredients list "to temper". Add garlic and saute till golden brown. Add onion and saute for few minutes. Add sundakai and tomato now. Saute well.
2. Add the masala's: Turmeric powder, Red chilli powder, Cumin powder and salt. Mix well. Add tamarind juice and water required for the desired consistency. Bring to a boil. Then simmer for 8-10 minutes or till the desired consistency is reached.
Notes:
- You can skip tomato from the ingredients.
- Add water only to the required consistency of your preference. If its too runny, simmer till the sauce reduces and thickens.
- Check the taste after the sauce comes to a boil. Add tamarind juice if required.
- The same kuzhambu recipe can be prepared with sundakkai vathal and ladies finger.
I have to find this lentil here, or i can use it for any other , gravy is awesome.
ReplyDeleteYou can also use sundakkai vathal or ladies finger in the recipe instead of sundakkai
