Carrot Halwa is a simple, delicious and nutritious sweet with oodles of ghee and sugar. It can be prepared ahead for a party or to serve guests as desserts with a scoop of ice cream. If you are a lazy person like me, grating carrots is a big task:P
CARROT HALWA RECIPE

Ingredients:
Carrots - 1 cup, fresh, peeled and grated
Milk - 1 cup
Sugar - 3/4 cup
Cardamom - 2, broken and crushed
Cashew Nuts - 10, broken and roasted
Raisins - 8
Ghee - 1 tbsp
Method of Preparation:
Milk - 1 cup
Sugar - 3/4 cup

Method of Preparation:
1. Prepare the ingredients and keep it ready. In a pan, heat ghee and roast the cashew nuts and raisins. Remove the nuts and keep aside. In the same pan with ghee, add the grated carrots and saute for a minute or two in medium heat till the rawness has gone. Add milk.
2. In high heat, let the milk come to a boil. Reduce the heat to medium/ low and let it cook for 30 minutes or till it has reduced down slightly. Add sugar and cardamom pods. Stir in and let it cook further. Keep stirring in between by scrapping off the sides.
3. As it starts to reduce completely, add the roasted nuts and raisins. Stir well and cook till the halwa is thickened and cooked.
Notes:

Notes:
- Slow cooking of carrots with milk, gives a rich taste.
- Adjust the quantity of sweet according to your taste.
- Sauteing the carrots in ghee gives a nice aroma and taste to the halwa.
