Hey Here comes my 100th post in Delectable Flavours!!!! Been 5 months into the blogging world and had learnt so much!! Happy to have known few fellow bloggers and their support. :):);)
Its a low calorie snack for potato lovers!!! I was inspired from the recipe of Tarla Dalal's Pudina Aloo. Mixed Herbs Aloo is a easy, flavouful and healthy chaat mixed with heaps of greens which is low in calories and very nutritive.
MIXED HERBS ALOO RECIPE

Ingredients:
Baby Potatoes - 2 cups
Black Salt - 1/4 tsp
Butter (Low Fat) - 2 tsp
Onion - 1, finely chopped
Capsicum - 1 tbsp, finely chopped, red colour preferred
Cornflour - 1 tbsp + 1 tbsp water to dissolve to a fine paste
Mixed Herbs - 2 tbsp or as you prefer
Salt - to cook baby potatoes
Method of Preparation:

Capsicum - 1 tbsp, finely chopped, red colour preferred
Cornflour - 1 tbsp + 1 tbsp water to dissolve to a fine paste
Mixed Herbs - 2 tbsp or as you prefer
Salt - to cook baby potatoes
For the green chutney:
Grind to a smooth paste

Mint Leaves - 1 cup, fresh, chopped
Coriander Leaves - 1 cup, fresh, chopped
Onion - 1, small, roughly chopped
Lemon Juice - from 1 lemon
Sugar - 1/4 tsp
Green Chillies - 4, roughly chopped
Salt - to taste
Water - required for smooth paste

Method of Preparation:
1. Prepare the green chutney with the ingredients under "To prepare the green chutney" and keep aside. Wash the baby potatoes well and boil it well till the potatoes are cooked inside wth enough water and salt to taste. Drain the water and peel the skin. Keep it aside. Prepare the rest of ingredients and keep it ready. Prick small holes in every baby potato. Add the green chutney to the potato and toss well.
2. Let it marinate for 30 minutes. Meanwhile, In a small cup, add cornflour and water to foam a smooth paste. Heat butter in a non stick pan, add onions and saute well.
3. As the onions turn transulent, add the capcicum and saute well. Add the marinated potatoes. Let the green chutney sauce cookes with the potatoes.
4. After a minute, add the cornflour paste and toss well without breaking the potatoes. Once the aroma releases, Sprinkle the mixed herbs and toss well for a few seconds. Turn off and serve hot!!!
Notes :
Serving Suggestion: Garnish with finely chopped onions and few mint leaves.

Notes :
- You can also pressure cook the baby potatoes for 3 whistles in medium flame and simmer for 5 minutes instead of boiling.
- It is very important that you prick the peeled potatoes with small holes for the marination to infuse flavours. Else the potato will lack the freshness of flavours inside.
- I have used green capsicum. If you use red capsicum the colours will contrast and the chaat will look very attarctive and brilliant.
Serving Suggestion: Garnish with finely chopped onions and few mint leaves.
