To the easy, tasty and simple anytime sweet kesari recipe....
RAVE KESARI RECIPE

Ingredients:
Rava - 1/2 cup
Sugar - 1/2 cup or less
Water - 1 cup
Cashew Nuts - 10, broken
Cardomam - 1 crushed
Ghee - 2 tbsp + 1 tbsp
Kesari Colour / Food Colour (Orange) - pinch
Method of Preparation:
1. In a pan, add ghee and roast broken cashew-nuts till golden brown. Just remove the roasted cashew nuts to a plate and keep aside. In the same pan at low flame, roast the rava(sooji) till aroma releases and the rava changes colour. Transfer the roasted rava to a plate and keep aside.
2. Heat the pan in medium heat, add water, colour powder and cardamom. Once it comes to a boil, add the roasted rava slowly while stirring continuously so that the lumps are not formed. Now turn the heat to low, and cook the rava covered for a minute. Then keep the flame in medium and keep stiring until its starts to thicken. Add sugar at this stage and keep stirring.
3. As the sugar melts, the rava starts to loosen again. Keep stiring continuously. Add the roasted cashew nuts at this stage and keep stirring until it starts to bubble up and starts to thicken. Add ghee and keep stirring as the kesari starts leaving the sides of the pan. Turn off.

Notes:
- While adding rava, the water should be bubbling hot.
- Keep stirring to avoid forming lumps.
- Add ghee for extra flavour while serving hot.
- Add the cashew nuts bits at the last for its crunchiness.
Serving Suggestion:
You can grease a mold of any desired shape with ghee and stuff the kesari inside while its still hot and demould to get the shape. Top it with cashew nut and saffron strands with drizzle of ghee.
