MUSHROOM BRIYANI RECIPE

Ingredients:
Bamasti Rice - 1 cup
Cloves - 4
Star Anise - 1
Cinnamon - 1
Bay Leaves - 1, crushed
Shallots (Small Onion) - 10, peeled
Green Chillies - 2, slitted
Curry Leaves - few
Coriander Powder - 1 tbsp
Ginger Garlic Paste - 1 tbsp
Tomato - 1, small, deseeded, chopped
Turmeric Powder - 1/2 tsp
Salt - to taste
Mint Leaves - 1/4 cup
Coriander Leaves - 1/4 cup
Water - 1.75 cup
Oil - 1 tbsp
Ghee - 1 tbsp
Method of Preparation:

Coriander Powder - 1 tbsp
Ginger Garlic Paste - 1 tbsp
Tomato - 1, small, deseeded, chopped
Turmeric Powder - 1/2 tsp
Salt - to taste
Mint Leaves - 1/4 cup
Coriander Leaves - 1/4 cup
Water - 1.75 cup
Oil - 1 tbsp
Ghee - 1 tbsp
Method of Preparation:
1. Soak basmati rice in water for 20 minutes. Prepare the ingredients and keep it ready. Heat water in a sauce pan, once it comes to boiling stage, add mushrooms and let it be for a minute. Remove, drain and rinse in running water using a strainer to remove the dirt's. Once it cools down a bit, cut the mushrooms and keep aside. Heat oil in a pressure cooker and add shallots(Small Onions), green chillies, curry leaves and saute for a minute. Then add coriander powder and saute well in low flame till the aroma releases.
2. If it tends to stick to the bottom, just sprinkle water. Add ginger garlic paste and tomatoes and let it smash well. Add mushrooms and saute for few minutes. Add the rice.
3. Add water, turmeric powder, salt. Let it come to a boil. Add ghee. Pressure cook for 1 whistle and 5 minutes. Open after the steam releases. Add the mint and coriander leaves. Close again and let it sit for 10 minutes, Serve !!

Notes:
- You can replace basmati rice with seeraga samba rice. Use the water proportion according to the rice you are using.
- You can add the mint and coriander before pressure cooking also.
