Starting of the blogging journey, I never knew I would get addicted to blogging so much and I would find happiness through the readers satisfaction:) Blogging just happened like that and with my loved one's support it just goes on!!! Made this strawberry cheesecake as my best buddy visited us for lunch!!! I must say strawberry and chocolate is one of the best combination in desserts and so is this dessert!!!

FRESH STRAWBERRY CHEESECAKE RECIPE
Recipe Category: Dessert
Preparation Time: 45 minutes Freezing Time:8 hours Serves: 3 big glasses or 6 small glasses
Ingredients:

BASE:
Dark Fantasy Biscuit - 6
Marie Biscuit - 3
Cashew nuts - 10, broken roughly
Butter - 2 tbsp
Milk  - 1 tbsp or little less or as required for base consistency to be firm

STRAWBERRY CREAM LAYER:
Cream Cheese or crumbled homemade paneer - 1 tbsp
Hung Curd - 1/2 cup
Fresh Cream - 1/2 cup
Powdered Sugar - 1/3 cup or more to suit your taste and the sourness of fruit
Agar Agar (China Grass) - 1 tbsp
Water - 3 tbsp
Strawberry - 100 grams, packed, after cleaning

STRAWBERRY LAYER:
Strawberry Puree - 3 tbsp
Agar Agar (China Grass) - 1/2 tbsp
Water - 1.5 tbsp

GARNISH:
Sliced Strawberries
Mint
Powdered Sugar

Method of Preparation:
BASE:
1. Crush biscuits in a blender bu just a pulse, don't grind finely. Add butter and cashew nut. Pulse once.
2. Add milk only to bind the mixture. It should not be loose. Take the glasses to be served, spoon the base mixture to the glasses. Press well using the back of spoon to set it correctly.FREEZE FOR 30 MINUTES.
MIDDLE LAYER:
3. In a mixing bowl, add cream cheese and hung curd, beat it till smooth. Add powdered sugar and beat well till smooth.
4. In another big mixing bowl, add cream and beat till slightly fluffy and thin. Add curd mixture to the cream and mix well. In a small sauce pan, add water and agar agar, it starts to bubble, keep stirring, once the agar is dissolved. Turn off.
5. Make strawberry puree in a food processor. Reserve 3 tbsp of strawberry puree for top layer. In another pan, boil strawberry puree in medium heat stirring continuously. Add agar agar in the boiling strawberry by stirring.
6. Add the strawberry puree to the cream curd mixture. Mix well. If you prefer to add red food colour, add now. I did not use.
7. Using a ice cream scooper, add the mixture to the glasses. FREEZE FOR 4-5 HOURS OR OVERNIGHT. In a small sauce pan, add water and agar agar, it starts to bubble, keep stirring, once the agar is dissolved. Turn off.

TOP LAYER:
8. Boil the strawberry puree, add agar agar. Mix well. Add to the freezed middle layer slowly. FREEZE FOR 4-5 HOURS OR OVERNIGHT.
Garnish with thinly sliced strawberries and mint leaves!!! Sprinkle powdered sugar over it!!!
Serve !!!

Notes:

  • You can also make this in loose bottomed pan, then slice the cakes.
  • You can use crumbled paneer instead of cream cheese. 
  • You can also make more layers by using your favourite combo.
  • Leave it to set till its firm, and then add the next layer, else it will combine.
