An spicy cauliflower semi gravy recipe for rotis, chappathi or naan from my mom's kitchen. Though I have spent most of my schooling life in hostel, my mom made sure I don't miss home food that she would send packs of tiffen for everyone in my room. Mostly it would be non veg as my hostel served only veg. One veg recipe she sends with chappathi is this and we loved it.
CAULIFLOWER SEMI GRAVY RECIPE

Ingredients:
Cauliflower - 1, big, florets
Ginger - 3 tsp, finely chopped
Garlic - 3 tsp, finely chopped
Onion - 1, big, finely chopped
Tomato - 1, big, deseeded, finely chopped
Oil - 2 tbsp (For shallow frying)
Turmeric Powder - 1/2 tsp
Salt - as required
Water - 1/4 cup
To shallow fry cauliflower mix:
Besen flour - 1 tbsp
Red Chilli Powder/ Chicken 65 Powder/ Cauliflower fry powder - 2 tsp
Notes:
Ginger - 3 tsp, finely chopped
Garlic - 3 tsp, finely chopped
Onion - 1, big, finely chopped
Tomato - 1, big, deseeded, finely chopped
Oil - 2 tbsp (For shallow frying)
Turmeric Powder - 1/2 tsp
Salt - as required
Water - 1/4 cup
To shallow fry cauliflower mix:
Besen flour - 1 tbsp
Red Chilli Powder/ Chicken 65 Powder/ Cauliflower fry powder - 2 tsp
Notes:
- The cauliflower mix can be any ready-made fry mix powder or red chilli powder. I have used red chilli powder here in the recipe.
- The consistency can be adjusted according to your taste with water
Method of Preparation:
1. Prepare the required ingredients. In a vessel, boil water, add the cauliflower florets in boiling water. Leave it for 2 minutes. Remove and strain the florets through a strainer. When it is still hot, add the fry mix and gently toss so that it coats well. Leave it for 5 minutes. Heat oil in a wide pan, shallow fry the cauliflower till golden brown.
2. Remove the cauliflower and keep aside. In the same pan with the oil, add ginger and garlic. Saute for few minutes till it starts releasing aroma.
3. Add onions and saute till translucent. Add turmeric powder and salt. Add tomatoes. Saute well for few minutes till the tomatoes starts to shrink. Check spice and add salt or red chilli if required.
4. As the mixture starts to releases oil, add the shallow fried cauliflower and saute well. Add water and let it cook in medium heat. Toss in once in a while still the gravy starts to thicken. Remove and serve.
