SEER FISH LEMON FRY/ VANJARAM MEEN VARUVAL RECIPE

Ingredients:
Seer Fish / Vanjaram Meen - 3, big, sliced, fresh
Turmeric Powder - 1/4 tsp
Oil - for frying
First Marination: 2 Hours Minimum
To be ground to a fine paste:
Ginger - 4 "1" inch pieces
Garlic - 8
Lemon Juice- 1 tbsp
Peppercorns - 1tsp
Dry Red Chilli - 2
Fennel Seeds - 1 tbsp
Rock Salt - as required for taste
Coconut - 2 tbsp, grated,fresh
Food Colour - Red, pinch (Optional)
Second Marination: 3 Hours Minimum
Red Chilli Powder - 1 tbsp
Turmeric Powder - 1/2 tsp
Cumin Powder - 1/4 tsp
Turmeric Powder - 1/4 tsp
Oil - for frying
First Marination: 2 Hours Minimum

Second Marination: 3 Hours Minimum
Red Chilli Powder - 1 tbsp
Turmeric Powder - 1/2 tsp
Cumin Powder - 1/4 tsp
Method of Preparation:
1. Clean the fish slices with turmeric powder. Prepare the first marination with lemon juice to a fine paste.
2. Marinate the slices with the masala paste for 3 hours minimum and leave overnight for more taste. Prepare the masala powder for second marination. Marinate for minimum 3 hours. Shallow fry the fishes on a hot iron tawa with oil for 3 minutes on both sides in medium heat.
Notes:
Best when served with hot steaming rice, sambar and rasam.

Notes:
- The first marination must be thick paste and not runny. so add water only if required, else the lemon juice itself is sufficient to make a fine paste.
- Marination time is important for the fish flavor.
- You can use any fish for this recipe.
- Food colour red can be used for colour. I have not used.
Best when served with hot steaming rice, sambar and rasam.
