Welcoming 2015 with a sweet!!! Palkova is a rich creamy milk sweet which is time consuming to make but finishes off in minutes.HAPPY NEW YEAR 2015!!!

THIRATIPAL/ PALKOVA RECIPE

Preparation Time: 3 minute Cooking Time: 1 hour Serves: 10
Ingredients:

Milk - 1.5 liter
Sugar - 1/2 cup
Salt - tiny pinch
Curd - 1 tbsp

Method of Preparation:

1. Heat milk in a thick heavy bottomed pan(I have used non stick). The heat should be low. Once it comes to a boil, keep stirring with a laddle. 
2. The milk starts reducing and tends to stick to the bottom so keep stirring. Scrape the sides of the pan and keep string until it starts reducing. It took 45 minutes for the quantity I am making. Once the milk is getting thickened, add sugar and salt. Sugar melts and the milk looses again. Keep stirring. 
3. Now, it turns colour slightly. Add curd at this stage to get the grainy texture. 
4. It starts to thicken again, keep stirring and scrape the sides. It will thicken when its cooled, so I removed from heat at this stage. 


Notes:


  • Adjust sugar to suit your taste.
  • Adding salt elevates the sweetness. Just a tiny pinch, else will over power. 
  • Don't add more curd than required. 
  • You can add a pinch of cardamom and a tablespoon of ghee if desired. 
  • You can also add saffron strands for colour and flavour. 
  • You can also set it in a plate to cut it and serve.
