EQUIPMENTS NEEDED:
Whisk, muffin tray and cupcake liners.
Method of Preparation:
1. Pre-Heat the oven to 180 degree C. Line the muffin tray with cupcake liners and keep it ready. To top the chocolate chips on top without sinking into the batter mix it with flour and keep aside. In a big mixing bowl, add flour, baking powder and salt.
2. You can either sift the dry ingredients or whisk the ingredients really well in a circular motion with a whisk. Add brown sugar and mix it in. Add oil and keep whisking while adding.
3. Add vanilla essence and milk. Keep whisking, slowly add water until it reaches the desired consistency.
4. Pour the batter into the cupcake liners little more than the half size of cup. Gently tap so the batter is well surrounded. Sprinkle the chocolate chips coated with flour on top and sprinkle brown sugar in the centre. Bake @ 180 degree C for 15 minutes in the middle rack or a cake tester inserted comes out clean.
Once it's baked, let it cool and then transfer into an airtight container.
