I got this salad idea of using mayonnaise with cucumber from eHow and ever since I make this often to have as a quick filling and refreshing salad after workouts. The recipe is good when refrigerated for a minimum of 2 hours.
CUCUMBER SALAD
Ingredients:
Cucumber - 1, medium, peeled, cut into cubes
Tomato - 1, small, deseeded, chopped into cubes
Milk - 1 tbsp
Mayonnaise - 2 tbsp
Pepper - 2 tsp
Black Salt - to taste
Tomato - 1, small, deseeded, chopped into cubes

Mayonnaise - 2 tbsp
Pepper - 2 tsp
Black Salt - to taste
Method of Preparation:
- In a mixing bowl, add milk and mayonnaise and whisk till the mayonnaise is smooth. Add salt and pepper. Whisk and keep aside.
- Deseed tomato and cut into cubes. Slice the ends of the cucumber, peel the skin and cut into medium dice.
- Mix cucumber and tomato with mayonnaise mix. Refridgerate for 2-4 hours.
- Serve chilled.
I too make this salad everyday during dinner time and I include more veggies in it and also pour beaten curd. Thank u for the recipe.
