A special day needs a special delight, isn't? Celebrating my DH birthday in Pondicherry so scheduled an little delight post which was sitting in my drafts for a long time!!!
Aren't these little donut muffins look adorable? Yep, they are so beautiful and tasty. It can be prepared in minutes for an yummy bite!!!
The nutmeg cinnamon flavoured sugar over the donut holes are so packed with richness of butter and flavour!!! Do try baking these cutie donut holes and experience yourself!!!
MINI MUFFIN DONUT RECIPE

Ingredients:
Sugar - 1/4 cup
Nutmeg - 1/4 tsp
Butter - 2 tbsp, melted, unsalted
Milk - 1/4 cup
Baking Powder - 1/2 tsp
All Purpose Flour - 1/2 cup
Salt - tiny pinch
Muffin Coating:
Sugar - 1/4 cup
Cinnamon - 1/2 tsp
Nutmeg - 1/2 tsp, grated
Butter - 2 tbsp, melted, unsalted

BAKING TIME: PRE HEAT @ 180 degrees C. Bake @ 200 degree C for 10 minutes in the middle rack then Bake @ 180 degree C for 3-4 minutes(Check for golden brown, if so its done)
****Time varies from oven to oven. Check after 10 minutes and then set time accordingly.

- I have filled only half the muffin cup each, so they are bite sized. For full, fill the cup fully and it will raise a little above. So, the quantity of muffins decrease, so you have to double the recipe accordingly.
- You can also pipe chocolate ganache over the top while serving.
Method of Preparation:
1. Preheat the oven to 180 degree C. Grate nutmeg using a fine grater and keep aside. In a mixing bowl, add sugar and nutmeg.
2. Add baking powder, butter and milk. Whisk well.
3. Add all purpose flour little by little. Just fold the flour into the wet ingredients using a spatula. Grease a mini muffin pan with butter.
4. Using a small scoop, scoop batter into the mini muffin pan filling only half the holes. Bake for 10 minutes at 200 degree C. Then check the muffin and bake for 12-15 minutes at 180 degree C till its golden brown. In a small bowl, add sugar,cinnamon powder and nutmeg powder. Mix well. In another small bowl, add melted butter.
5. While the mini donut muffin is still warm, dip in the butter first and then in the sugar mixture to well coat on all the sides. Cool in a wire rack. Once cooled, transfer to an air tight container.
