MUSHROOM 65 RECIPE

Ingredients:
Button Mushrooms - 1 pack, cleaned in hot water, cut into halves
Oil - For Deep Frying
"To Marinate"- Marination Thick Batter:
Besen Flour - 2 tbsp
Pepper Powder - 1/2 tbsp
Rice Flour - 1.5 tbsp
All Purpose Flour - 1/2 tbsp
Salt - to taste
Turmeric Powder - 1/4 tsp
Red Chilli Powder - 1/2 tbsp * Kashmeri chilli powder for colour
Lemon Juice - 1/2 tsp
Water - as required for thick batter
Food Colour - pinch, red colour (Optional)
Ginger Garlic Powder/ Paste - 1/2 tbsp (Optional) ***Enhances Taste and Flavour
MSG / Ajinomoto - pinch (Optional) ***Enhances Taste but not healthy.
Notes:

Notes:
- If using ginger garlic paste, use fine paste.
- Check the marination batter for salt and spice and adjust accordingly.
- In the last batch of frying, add curry leaves required and fry along.
Method of Preparation:
1. Cleaning the Mushroom: Boil water in a pan, once it comes to rolling boil, turn off the heat and add the mushrooms. Gently keep tossing in the water with a spatula so the dirt comes off in the water. Using a strainer, filter the water and allow tap water in the mushrooms. So its cleaned off dirt's and is ready to be cooked. In a mixing bowl, add the marination items under the "To Marinate".
2. Add the mushrooms and let it rest for 15 minutes before frying. Deep fry the mushrooms and drain in a tissue paper. Serve with fried curry leaves and chaat masala.

Serving Suggestion:
I usually prefer to serve with sliced onions, fried curry leaves and chaat masala sprinkled over. (As in pic)
