A simple, spicy, quick rice which we have very often at home is Schezwan Egg Fried Rice. I make Vegetable Fried Rice with Mushroom 65 for lunch box which is a favourite combo at home!!! If you have the vegetables and schezwan sauce at home, this recipe can be prepared easily. I have used store bought schezwan sauce here since I had no stock of homemade one. Homemade once are more spicy and flavourful.
SCHEZWAN EGG FRIED RICE RECIPE

Ingredients:
To Cook Basmati Rice: (Pressure Cooker Method)
Basmati Rice - 1 cup
Water - 1.75 cup
Olive Oil - 1 tsp
Salt - to taste
For Fried Rice:
Olive Oil - 1 tbsp
Dry Red Chilli - 2, broken
Soya Sauce - 1 tsp
Others:
Olive Oil - 2 tsp
Spring Onion Whites - 1/4 cup
Capsicum - 1/4 cup, finely chopped
Carrot - 1/4 cup, finely chopped
French Beans - 1/4 cup, finely chopped
Cabbage - 1/4 cup, finely chopped (Optional)
White Pepper - 3 tsp
Salt - to taste
Water - 2 tbsp
Egg - 1 or 2
Schezwan Sauce - 3 tbsp (Homemade or Store Bought) ***adjust to spice level
Spring Onion Greens - 1/4 cup to garnish
MSG - pinch (optional)
Notes:
- I have pressure cooked the rice in this recipe, for newbies it's best to start with open pan cooking for non-sticky long rice. You can see the open pan method here Open Pan Basmati Rice Cooking.
- Ajinomotto/ MSG adds enhances flavours to the fried rice, but it's not recommended because its believed to cause severe health problems. In roadside shops, they add this which gives us good taste and flavour.
- If using ajinomotto, use it after heating the oil. Saute it in high flame for a few seconds before adding the spring onion whites.
Method of Preparation:
1. Prepare the required ingredients and keep ready. Soak rice for 10-15 minutes maximum. Pressure cook the rice with water, olive oil and salt for 1 whistle and 5 minutes over simmer.
2. After the pressure releases, open and let it get cooled in an open plate. Drizzle olive oil so they don't stick to each other. In a pan, heat olive oil, add dry red chillies. Add rice and soya sauce. Slowly toss in between without breaking the rice in slow flame. The fried rice is ready. Keep aside.
3. In a wide non-stick pan, add olive oil, spring onion whites, capsicum, beans, carrots and saute on high flame for 3-4 minutes.
4. Add pepper and salt. Sprinkle little water for the vegetables to cook. Saute for 2 minutes in medium heat. Add egg and scramble it with the cooked vegetables.
3. Add schezwan sauce, fried rice and mix. Garnish with spring onion greens.
