Nutritious and yummy one pot meal!!!
VEGETABLE BRIYANI RECIPE

Ingredients:
Basmati Rice - 1 cup, washed, soaked
Onion - 1, big, finely chopped
Ginger Garlic Paste - 1.5 tbsp
Tomato - 1, big, deseeded, finely chopped
Mint Leaves - 2 tbsp
Coriander Powder - 1 tbsp
Red Chilli Powder - 1 tbsp
Garam Masala - 1 tsp
Turmeric Powder - 1/4 tsp
Water - 2 tbsp ****To cook vegetables
Water - 1.75 cup ***To cook rice
Salt - as required
Coriander Leaves - 2 tbsp
Ghee - 1 tbsp + 1 tbsp
Oil - 2 tbsp
Spices:
Cloves - 6
Cinnamon - 1 inch piece
Cardamom - 1
Star Anise - 1
Vegetables:
Potato - 1/4 cup, peeled, chopped
Cauliflower - 1/4 cup, cleaned
Green Peas - 1/4 cup, fresh or frozen
Carrot - 1/4 cup, finely chopped
French Beans - 1/4 cup, finely chopped
Notes:
According to the rice you are using, adjust the water quantity to cook grainy rice.
You can add vegetables of your choice.
Onion - 1, big, finely chopped
Ginger Garlic Paste - 1.5 tbsp
Tomato - 1, big, deseeded, finely chopped
Mint Leaves - 2 tbsp
Coriander Powder - 1 tbsp
Red Chilli Powder - 1 tbsp
Garam Masala - 1 tsp
Turmeric Powder - 1/4 tsp
Water - 2 tbsp ****To cook vegetables
Water - 1.75 cup ***To cook rice
Salt - as required
Coriander Leaves - 2 tbsp
Ghee - 1 tbsp + 1 tbsp
Oil - 2 tbsp

Star Anise - 1
Vegetables:
Potato - 1/4 cup, peeled, chopped
Cauliflower - 1/4 cup, cleaned
Green Peas - 1/4 cup, fresh or frozen
Carrot - 1/4 cup, finely chopped
French Beans - 1/4 cup, finely chopped
Notes:
Method of Preparation:
1. Prepare the required ingredients. Soak cauliflower florets in warm water mixed with turmeric powder.
2. Rinse rice thrice and soak for 20 minutes. In a wide pressure cooker, add ghee and oil. Once it's hot, add spices and then onion. Saute till its translucent. Add the vegetables. Saute for two minutes in medium heat.
3. Add tomatoes and mint leaves. Add turmeric powder, red chilli powder, coriander powder and garam masala. Add 2 tbsp of water and let the veggies cook for a couple of minutes.
4. Add rice. Add water. Add ghee. Pressure cook for 1 whistle and 5 minutes over simmer. Add coriander leaves.
Serve hot with Onion raita!
