Double Beans Dry Masala is very delicious and healthy. Double beans cooked in thick flavoured coconut milk adds rich taste. The recipe is simple to prepare if you have the dry roast masala prepared in advance. I prefer to keep as a stuffing to my chappathi's and roll like a frankie. Aren't double beans frankie fabulous?? Ingredients:
Double Beans - 1/2 cup
Small Onion - 1/4 cup, finely chopped
Thick Coconut Milk - 1/2 cup
Garam Masala - 2 tsp
Salt - as required
Dry Roast Powder:
Dry Red Chilli - 4
Khus Khus - 2 tsp
Coriander Seeds - 1 tsp
Pepper - 1 tsp
Cumin Seeds - 1 tsp
Fennel Seeds - 1 tsp
Notes:

Khus Khus - 2 tsp
Coriander Seeds - 1 tsp
Pepper - 1 tsp
Cumin Seeds - 1 tsp

Notes:
- You can skip the dry roast powder and add chilli powder, coriander and cumin powder 1 tsp each to the double beans. And add khus khus to the coconut and then extract coconut milk.
- The pictures in the recipe are taken when pressure cooked for 1 whistle and 3 minutes in simmer. But I have given the recipe method for open pan as pressure cooking may be difficult for newbies. If overcooked, the double beans will become mashy and chances are high for the masala to stick in the bottom of pan.
Method of Preparation:
1.In a pan, heat oil and fry the onions. Add double beans after the onion turns slightly brown.
2. Add the garam masala, dry roast powder and salt. Saute for few seconds. Add the thick coconut milk. Mix it well and allow it to cook till the curry starts to become less and dry. As the mixture turns dry it tends to stick, so keep in medium heat and keep tossing until a semi-dry consistency is reached. Turn off.
Garnish with fresh coriander leaves!
