My Love for Italian Cuisine
My friends love Italian as much as I do and they would wonder how frequent and quick I make these yummy treats. Cooking your plate of pasta is an art which when mastered you could just explore unique tastes each time. I would throw in my favorites, simmer the sauce and load with cheese. Sounds so simple?
Yes, the combinations are endless. I must thank my husband who took me for an Italian dinner in our first date when I fell in love with the flavours of it. From then on, I would find ways to have Italian and he clearly understood how much I loved. One rainy and cold evening, we were craving for something very spicy and that's when I first made pasta with Indian twist. It was big hit in our family and then on my experiments with pasta have pleased my taste-buds.

The word Arrabbiata means Angry in Italian and as the Arrabbiata sauce is hot and spicy and also ones reaction to it while eating. A good sauce makes a great pasta. Being a spice lover, I have used Arrabbiata sauce for farfalle.

"Chicken and Farfalle in a spicy tasty tomato sauce made with fresh tomatoes, garlic and chilli flakes."

Ingredients:
To Cook Chicken :
Egg - 1, whisked
Chicken - 1/2 cup, small diced boneless pieces
Breadcrumbs - 1/4 cup
Pepper - 2 tsp
Salt - as required to taste
Olive Oil - 1 tbsp
To Cook Pasta:
Del Monte's Farfalle Pasta - 1.5 cups
Salt - a pinch
Olive Oil - 1 tsp
Water - 4 cups
To Cook Prepare Arrabbiata Sauce:
Garlic - 2 tbsp, finely chopped
Chilli Flakes - 2 tbsp
Onion - 1, finely chopped
Cherry Tomatoes - 5, halved or quartered
Tomatoes - 3, medium sized, blanched
Oregano - 1/2 tbsp
Dried Basil Leaves - 1/2 tsp
Sugar - 1/4 tsp
Salt - as required to taste
Olive Oil - 1 tbsp
Garnish:
Parmesan Cheese - 2 tbsp, grated
Fresh Basil - 1 tsp, finely chopped
Notes:
- Parmesan cheese is usually preferred, but you can use other cheese of your choice to garnish.
- You can use any variety of pasta for this recipe. Penne is mostly used with arrabbiata sauce.
- Each type of pasta has its own cooking time so its best to check pasta while cooking for al dente.
- If you don't get fresh basil leaves, you can garnish with dried basil leaves.

- Use a large vessel with adequate water to cook the pasta perfectly without sticking to each other.
- Add the pasta only after the water is boiled and bubbling hot.
- Pasta should always be cooked al dente. Never over cook the pasta.
- Always add pasta to sauce as soon as its cooked.
- The sauce should just coat the pasta's enough and very saucy.
To Cook Chicken:
1. In a small bowl, beat egg with a fork or whisk. In another small bowl, take bread crumbs, add salt, add pepper. Mix well and keep aside. Clean chicken breast and chop it into cubes/small slices. Dip them in egg bowl and then dip/press in the breadcrumbs so that it coats around the pieces completely.
2. In a large frying pan, heat olive oil over medium heat and add chicken pieces. Fry them for 3-4 minutes on all sides until it gets cooked completely and gets a golden crust on the outside. Remove from pan and keep aside in a bowl.

To Cook Pasta:
3. In a large vessel, add water and let it boil in medium heat. As the water starts to bubble, add pasta, salt and olive oil. Keep stirring in between to prevent sticking. Just cook till al dente.
4. Check the pasta if its cooked with a fork to see if its soft yet firm enough to bite. Drain the pasta and reserve the stock water. Add the cooked pasta to the sauce once its ready.

5. Prepare the required ingredients. Chop white onion finely. Chop garlic into fine pieces. Chop cherry tomatoes into two. Blanch the tomatoes by adding the tomatoes to boiling water for 8 minutes or until the skin starts to peel off.
6. Remove from hot water and peel off the skin. Deseed the tomato and puree the tomatoes in a food processor until smooth. Transfer the tomato puree to a small bowl and keep aside.
7. In a large frying pan, heat olive oil over medium heat. Add garlic and chilli flakes. Saute for few seconds till aroma starts releasing from garlic. Add finely chopped onions and saute till golden brown.
8. Add cherry tomatoes. Then add tomato puree and let it simmer for 5-8 minutes. Keep stirring in between to avoid sticking to the pan.
9. Add the reserved stock water and then add oregano, dried basil leaves, sugar and salt. Stir in nicely and let it cook for a couple of minutes in low heat. Check spice level and then adjust accordingly to your taste if required.
10. Add the fried chicken pieces before the sauce gets thick. If the sauce gets too thick, add little pasta water. Let it cook in the sauce to get the flavours for two minutes.
11. As the sauce gets thick, add the cooked pasta. Toss in and serve hot with Parmesan cheese and fresh basil.
Before serving, garnish with grated parmesan cheese and fresh basil leaves or dried basil. I love to season with oregano.
